The Seitz line
Seitz is a German name with several possible origins. It could have been derived from the German personal name Seifried, a variant of Siegfried, or alternately from a personal name Seitz meaning descendant of Sigizo, the pet form of a number of names that begin with Sieg (victory). A still further possibility is that the name is the Germanized spelling of the Slovenian nickname Zajc, from Zajec, meaning hare. Seitz family history began in Bavaria, an old duchy in southwest Germany.
Above is a possible image of the Seitz coat of arms
I found this to explain the Seitz name and the Seitz coat of arms at http://homepages.rootsweb.ancestry.com/~seitzfam/_private/surname_heraldry.htm:
Origin of the Seitz Name
According to the dictionary of American Family Names, Seitz is a surname of German origin. Seitz is a variant of those names beginning with "Sig" such as Sigisbald, Sigismund, etc. Sig is derived from the word Segu or Sigu, meaning "might, power, authority, dominion or victory" It is often translated as "Glorious Conqueror".
Seitz Heraldry
The heraldic arms shown above are from Rietstap's "Illustrations to the Armorial General." Because these were printed in black and white, a color code is necessary: Horizntal lines are blue; Vertical lines are red; Dotted lines are gold; Checkered areas are sable brown; White areas are silver; Slanted lines are green; Black areas are of course black.
Below each, is the location it was issued. These are in French. Weissenhorn is a town in Bavaria, Allem is Allemand, meaning Germany, Augsbourg is Augsburg, a city in Bavaria, Seitzenburg a town in Bavaria also, and Vienne in Vienna.
A Johann Michael Seyz von Seyzenburg (Seitz von Seitzenburg) of an Austrian Seitz family received the patent of nobility in the year 1757.
I have no further information on the origin, history, or the specific Seitz families these were issued to. There may be other Arms aside from these. If anyone can shed some light on any of these please let me know.

Below is another crest, of a family that may be connected with the Seitz family.
Boise le Duc is "the Duke's Forest". The location of this place in unknown. Possibly France, the region of Alsace-Lorraine, or perhaps even Belgium.
As you know heraldic arms were issued to specific families, rather than to all individuals sharing that surname. The right to bear or display these arms was exclusive only to those whom the arms were granted and their descendants.
I have seen a few in recent years offered by companies that claim to have family arms and crests available for you at a cost, but these do not appear to be actual ones, rather ones that have been designed for you. Many of them have the same theme of a knight's helmet with a few variations. If you have any others you feel are legitimate, please share.

Leon Daniel Seitz Sr. married my mom, Zora Craft on 22 Jan 1946 in Durango, Colorado. They divorced on 13 Jun 1963. They had five children together:

All the children except for Ralph were adopted after their divorce years later to Billie "Bill" Miller Jr.; however, the name change to miller only occurred for the females, including myself.
After Leon's divorce from my mom, Zora, he married Dova Cleo Hart (date unknown). Dova Cleo Hart was born on 2 Apr 1914 in Jackson, Ohio and died on 31 Dec 2000 in Longmont, Colorado. Dova and Leon had no children together.
Dova Cleo Hart was married before her marriage to Leon. His name was Clifford Harold Wilson and he was born on 18 Sep 1909 in Spickard, Missouri and died on 13 Jul 1963 in Craig, Colorado. Clifford and Dova were married on 18 Nov 1934 in Sadalia, Colorado. BRIEF HISTORY OF JONATHAN HEINRICH SEITZ, JR. AND DESCENDANTS, from the book "History of The Stewarts, Phillips, and Sides", compiled by Esther Mae Mays Stewart, Sikeston, MO 1992:
Jonathan' Heinrich Seitz, Jr., interpreted "John Henry Sides, Jr. in American", was born about 1712 in Germany, and deceased in 1765 or early in 1766. He was 17 years old when he left upper Rhine Valley of Oberleft, Germany around 1729, with his father Jonathan Heinrich Seitz, Sr., fleeing war, a harsh winter, heavy taxation and religious persecutions. They migrated to Switzerland and Holland, where they spent nine years. They were from Palatine, an old German Empire, part of Bavaria. Proof of this is stated in the will of his father-in-law, Andreas Felsinger.
Jonathan Heinrich Seitz, Jr., met and married Dorothea Elizabeth Felsinger, daughter of Andreas and Anna Margaretha Felsinger after he left Germany and before immigrating to the United States.
Jonathan, his wife Dorothea and at least one child, a son arrived aboard the Queen Elizabeth in Philadelphia in 1738. He was listed as Jonathan Heinrich Seitz, Jr. They first settled in the township of Lower-Saucon in Northampton, Pennsylvania.
This was not the place Jonathan chose to rear his family. About twelve years later, Jonathan was found in the 1750 census of North Carolina with a 16 year old male living in the household, in Fayette District of North Carolina.
The (Seitz) Sides must have always been dreamers and were constantly seeking a better life for their families, even though it would mean difficult traveling for them. This is shown to us through their migration from Germany to Switzerland and on to Holland.
It is not known for sure how many children Jonathan and Dorothea had, but they at least had one son named John Henry Sides, III, born 1734, before the family arrived in the United States, some records show he was born in Holland. "John Henry, III; was the Progenitor of our Alabama Sides." Jonathan and Dorothea had three daughters, but I only have the name of one---Catherana Seitz, who married Henry Cagle, one married John K. Cagle, and the other married Casper Club, and four other sons, Peter Seitz, Adam Seitz, Jacob Seitz and George Seitz.
According to the Federal Census of 1790 covering North Carolina, Michael Sides, Christain Sides and Henry Sides (this Henry could have been our John Henry, III,) were given as heads of families in Salisburg District, Mecklenburg County, North Carolina. These could have been Jonathan Heinrich, JR. and Dorothea's children, because I found no records for John Henry Sides, III, that listed a Michael Sides as his son.

Information provided by Ken McCrea about Johannes Heinrich Seitz:
"Occupation: Shoemaker. The town of Perouse, where his son Joseph was born, was founded in 1699 for French refugees. In about 1720, the Duke of Wuerttemberg responded to a shortage of craftsmen in the village by sending craftsmen from other parts of Uerteemberg to Perouse. Johannes was a shoemaker and was one of the craftsmen brought to Perouse."
